(Chemical Engineering) The dissolving, by a liquid solvent, of soluble material from its mixture with an insoluble solid; leaching is an industrial separation operation based on mass transfer; examples are the washing of a soluble salt from the surface of an insoluble precipitate, and the extraction of sugar from sugarbeets.
